Lazy Noodles

Hey all. I decided to try my hand at one of these photo journal cooking threads since they're popping up quite a bunch on SA it seems.

Anyways, today we're going to make something called "Lazy Noodles". Atleast that's the very rough translation from the polish name. These are a great dish to make if you have some left over potatoes from a previous dinner and are feeling a little fat. Yes, these are pretty damn fattening but once in awhile it doesn't hurt eh?

This is a classic polish dish and it has many variations but we'll go through my familys way. First, let's get the ingredients down

  • About 1000 grams of Pressed Cottage cheese
  • Some left over potatoes. This is the kicker. If they are freshly made they will be too wet and won't work well for this. It is highly recommended you use left over potatoes. About 4 large potatoes should do for what I'm working with
  • A food mill or grater
  • 2 Eggs
  • Lots of flour

Now that you're ready you should probably setup a pot of water and begin to boil it. We're pretty fast with this so maybe turning it on in about 10 minutes might be better for you.

ONTO THE SHREDDING !!

Shred the cottage cheese and then finally the potatoes. Once done you should get this huge pile of cheese and potatoes

Now you're ready to add flour, there is no specific amount of floor but a good way to do it is split open about 1/6th of the mass of cheese/potatoe and in that little opening pile on flour until you it's the same height

You have the flour, now just make a little dip in the middle of the mass and throw 2 eggs into there

Begin the process of throwing it all together..

Continue to mash it up until you get a nice ball of dough. If it is not sticking together add some flour and continue doing so until you got a nice ball of dough. If your potatoes were wet you may want to add some potato flour. About 2 tbsp should be fine if they were only moderately moist.

Cup up the dough into about 4 or 5 blocks and begin to roll one of the blocks into a long thick roll.

Once you got a decently sized roll flatten it out a bit (but not too much!) Just a little tap all over the roll should do it. Begin cutting the roll into about 3cm blocks like so

You may want to begin cooking up your topping sauce which is really simple. It's just bread crumbs and butter. Throw some bread crumps into a heated pan (about medium heat)

Back to the noodles. You should have a pot of boiling water now so start throwing the noodle bits into the pot. Let them boil in there for about 4-5 minutes. Usually once the noodles go to the top of the water and you wait another minute or so then they are ready. Scoop them out and place them on a plate

Quickly back to the sauce! Once the bread crumbs start browning up throw in a stick of butter about 1cm in thickness.

Let melt, mix it every so often and throw maybe another stick of butter in there if you want a more "looser" sauce. Stir until all butter is melted. You should get sauce looking like this:

Dip a table spoon into the sauce and throw it over your noodles. About a table spoon of sugar will add a nice sweet taste to the noodles but is not neccessary, and then you have the final dish.

That's about it. I don't know if non-polski's eat this but I figured I would share it just for kicks. Also, as a final tip. You can throw the noodles into a heated pan after you take them out of the boiling water for an extra crispy noodle. I actually do that if we have some left over from tonight for tomorow lunch and it tastes awesome. This is really the ultimate left overs food.
