If you still feel like making mole from scratch, here's a recipe to make green mole. green mole is best with pork or chicken, and is a great tamal filling.

Ingredients

  • 12 tomatillos.
  • 4 jalapenos, green.
  • 1 medium zucchini.
  • 1/2 onion
  • 1 sprig of Cilantro
  • 2 small radishes
  • 2 cloves of garlic
  • 2 cloves
  • 2 allspice berries
  • 1 pinch of cumin, whole
  • 1 pinch of anise
  • 2 cups chicken stock
  • 1/2 cup corn oil, or lard for that heart-clogging experience.
  • 1/4cup of dried squash seeds (pepitas)
  • 1/4 cup of white sesame
  • 1/4 cup of peanuts
  • 1/4 cup of almonds

Cooking

Boil the tomatillos and jalapenos, then in a deep pan, add some of the oil and toast the sesame, squash seeds, peanuts, almonds, garlic and onions. You have to toast each ingredient separately. Once that's done, throw in the allspice, anise, cumin, cloves together and toast very quickly.

Grind all the toasted ingredients in a food processor or blender. Add some stock until you get a creamy paste. Add the rest of the oil or lard, the tomatos and chiles, the clinatro, zuchini and radishes. Blend until you get your mole paste.

Cook your chicken or pork separately and add the green mole on top once done. Serve with some rice.
