This is a simple, refreshing take on lemonade that should bring back some ecto-cooler nostalgia.

Wash cucumbers and roughly chop. Place in blender with water, sugar, and lemon juice and puree. Strain through a lame wire mesh then again through a finer mesh or cheesecloth or whatever the hell you want. Test for sweetness/acidity and add more sugar or lemon juice as desired. Garnish with FINELY GROUND toasted coriander. The first try was with my ghetto-crushed stuff and it was too gritty.

  • 2 Cucumbers, preferably long English type
  • 1 cup water
  • 1/2 cup sugar
  • 1 lemon
  • pinch finely-ground toasted coriander

Wash cucumbers and roughly chop. Place in blender with water, sugar, and lemon juice and puree. Strain through a lame wire mesh then again through a finer mesh or cheesecloth or whatever the hell you want. Test for sweetness/acidity and add more sugar or lemon juice as desired.
