  • Baby Potatoes
  • White Onion
  • Whole Wheat Bread
  • Olive Oil
  • Sea Salt
  • Freshly Ground Black Pepper
  • Basil
  • Chives
  • Tabasco (Optional)


Preparation

Okay, so let's go for a little background here. I'd never really thought about pork chop sandwiches until Mr. Fensler brought them to my attention. The other day at work, I'd mentioned to my boss that I had never had a pork chop sandwich, and he said that they're great. I thought about it for a while, and decided to give it a shot. This, ladies and gentlemen, is my take on the famous pork chop sandwiches.

But first, the side! Step one is to take your baby potatoes, and halve the ones that are fairly large.

Then we're going to bring three cups of water to a boil, and boil our potatoes for 15 minutes.

Now grab a bowl, and make a mixture of basil, olive oil, chives, salt and pepper. This will be the seasoning for your potatoes.

At the same time, you'll want to sauté half a white onion cut into large chunks, in butter, salt and pepper.

Crank your oven to 'broil' while the onions are cooking, and get your skewers ready. Try and time everything so you can do one step right after the other. In this case, make sure the onions are done at around the same time as the potatoes. Once the onions are slightly browned on the outside, kill the heat on the onions and potatoes, and drain the potatoes. Grab your skewers, and slide on alternating potato and onions. (DO NOT USE ALL OF THE ONIONS. SAVE SOME.) Then, brush the seasoning mixture you made earlier onto the potatoes.

Broil those suckers for a good 12 to 15 minutes. While this is happening, start prepping your pork chops. Take them out, and coat them lightly on both sides with sea salt, freshly ground black pepper, and olive oil.

Cook your pork chops as appropriate. I used my Foreman grill.

Once your chops are done, put them on the lower bread slice and dress with the remainder of the onions. Add a dash of Tabasco for some spice, if you wish.

Top off with the other pieces of bread, set your potato skewers on the plate next to the sandwiches, pour your beverage of choice and enjoy. Be sure not to set your curtains on fire.
