Tacos de Lengua
1 cow's tongue 2 onions, halved and peeled 1 head of garlic, sliced in half Handful of bay leaves 2 Tbs-ish of whole peppercorns
Bring everything to a boil, then put that shit on low and let it simmer for 3 1/2 - 4 hours depending on the size. I used a bigger tongue than I'm used to cooking, so mine was a little chewy still.
