- 12 cups Frozen Strawberries
- 1 pkg (1/4 C) Pectin
- 4.5 C Sugar
- 1/2 C Balsamic Vinegar
- 1 t Black Peppercorns
Mash all the strawberries in a dutch oven. Add the pectin and a 1/2 C of sugar.
Bring to a roiling boil, stirring frequently.
Add the other 4 C of sugar, bring back to a boil, and boil for 1 minute. Roughly crack the peppercorns.
Remove from heat and add the balsamic and pepper.
Ladle into jars and boil process for 10 minutes.
I somehow didn't take the requisite close-up shot. I'll update eventually. :)
