Here's a quick paneer recipe, it's really simple but tastes excellent and has even my meat eating friends wanting more (including two Germans who love their meat). For those of you on a diet, you can also replace the paneer with tofu.
- 1 block of paneer
- 2 tbsp sesame oil
- 3 tbsp soy sauce
- 2 tbsp thai sweet chili sauce
- 1 tbsp tomato ketchup (adds an interesting sweetness to the dish and helps the flavours combine i find...)
- 1 tbsp tomato puree
- 1-2 tbsp sambal oelek (depending on your spice tolerance)
- a little bit of grated fresh ginger
- a pinch of chili powder
- 1 red bell pepper
Cut the paneer into small blocks about 1cmx1cmx1cm.
Heat up the oil in a large pan and add the ginger, let it infuse into the oil.
Add the paneer and cook till it starts to get brown then add sliced bell peppers.
Add the soy sauce, and cook till crispy, then add the chili powder, sambal oelek and the tomato puree and mix well.
Add the ketchup and thai sweet chili sauce and cook on a low heat for a further 5 minutes.
I've generally served this on skewers at parties, or it tastes delicious eaten in pitta bread with fresh arugula.
