Swedish Pancakes by Semisponge

Pancakes! My family has a traditional recipe that we call "swedish pancakes", though I have no idea if they're actually Swedish. They're basically very very thin crepes!
And there's the recipe:
- 3 eggs
- 1 cup flour
- 1/2 tsp salt
- 2 cups milk
- 6 Tb melted butter
Beat eggs and 1/2 cup milk with whisk. Add flour and beat smooth. Beat in rest of milk and then the butter and salt. Heat pan (med flame) until drop of water sizzles. Drop batter (1 tbsp) into circles. When edges begin to brown, turn and cook another minute or two. Can be made ahead and kept in a warm oven. (That part is a lie, eat immediately)
Spread with powdered sugar and lingonberry jam, die of heart disease. Mmmmm.
These are actually quite difficult to make properly, learning to do so is a bit of a rite of passage. The pan my family uses is a bit smaller and shallower than a crepe pan as well. But! I heartily recommend you try, because these are so thin and crispy and buttery and gooooood.
Yes, I know it says "McCalls Nov 71" in the corner. 40 years is well enough time to make a family tradition.
