I went through a soda bread phase a few months ago. It's great that its so quick and easy, no fucking about waiting for things to rise.

The recipe was vaguely adapted from one in the Great British Bake Off (UK TV Series) cookery book of all places.

  • 200g each of plain white and wholemeal flower
  • 2 teaspoons of baking soda
  • salt
  • 350ml buttermilk

When you mix everything up it should make a rough sticky dough, so add flour / buttermilk if that's not what you have. Make it into a roughly round lump and put this in the oven at 200C for 25-30mins or you tap the bottom and it sounds hollow.

I think I cooked mine in a big dutch oven thing, but I can't really remember how that worked out. It seemed like the right thing to do at the time, but I guess a baking sheet will do.

I like mine topped with cream cheese and smoked salmon, lots of black pepper and a squeeze of lemon. Yum.

Or if the soda bread is a few days old then lightly toasted and topped with delicious soft scrambled eggs sour cream and smoked salmon.

Man I could go for some smoked salmon right now.
