* 1 cup sorghum flour&lt;br /&gt;
* 1/2 cup quinoa flour&lt;br /&gt;
* 3-4 tbsp tapioca starch&lt;br /&gt;
* 2 tbsp xanthan gum&lt;br /&gt;
* 3 tsp baking powder&lt;br /&gt;
* 3/4 tsp baking soda&lt;br /&gt;
* 1/4 tap salt&lt;br /&gt;
* 1 1/2 cup mashed bananas&lt;br /&gt;
* 1 1/8 cup sugar&lt;br /&gt;
* 1/2 cup vegetable oil&lt;br /&gt;
* 1/4 cup water&lt;br /&gt;
* 1 1/2 tsp vanilla&lt;br /&gt;

Combine dry ingredients in a bowl: sorghum flour, quinoa flour, tapioca starch, xanthan gum, baking soda, baking powder and salt (as well as cardamom if you decide to use it).&lt;br /&gt;

With an electric mixer, beat bananas, oil, sugar, water, vanilla and egg.&lt;br /&gt;
&lt;br /&gt;
Add dry ingredients to wet mix. Add chocolate chips, pecans or blueberries last and stir in gently with a spatula.&lt;br /&gt;
&lt;br /&gt;
Spoon batter into a greased bread pan. Let sit for 30 minutes and preheat oven to 350°F.&lt;br /&gt;
&lt;br /&gt;
