Tacos de Lengua

1 cow's tongue 2 onions, halved and peeled 1 head of garlic, sliced in half Handful of bay leaves 2 Tbs-ish of whole peppercorns

Bring everything to a boil, then put that shit on low and let it simmer for 3 1/2 - 4 hours depending on the size. I used a bigger tongue than I'm used to cooking, so mine was a little chewy still. You REALLY want to cook it low and slow for as long as possible. A slow cooker, if it's big enough, would be pretty awesome for this application.

After it's done simmering, pare off all the skin and tastebuds. Cut it into bite size chunks and pan fry it with some lard. The steam sort of blurred most of the image:


Plate up with some double-stacked tortillas, salsa verda, cilantro and lime juice! That's it! Enjoy your tacos de lengua
