Street Food: Pork Skewers

Reflecting a fusion of both American BBQ and Japanese yakitori, these are a popular street food in Manila. The flavors are very approachable, and are actually quite addicting. Banana ketchup, patis/soy with a sugar backbone are very similar to the flavor of what many people consider "American" bbq sauce, ketchup and worcestershire with sugar (yeah I know there are different types of American BBQ, but for most, when you go to the store and buy some Bullseye or whatever, it tastes like ketchup, Worcestershire, and sugar (and "Smoke flavor").

1 lb pork loin, sirloin, shoulder, sliced into 1 inch wide thin strips.
1/2 cup vinegar
1/2 cup banana ketchup
2 tbsp soy sauce
2 tbsp patis
1/2 cup brown sugar
1 tsp hot sauce (optional)
1/2 cup citrus soda, calamansi soda would be best, but grapefruit or lemon-lime soda is fine.
1 head of garlic, crushed
1 small onion
1 tsp sesame oil (optional)
salt to taste

I like to do this in a blender. Put everything but the pork in a blender and puree. Add to sliced pork and marinate for at least an hour, overnight is best. While you're marinating overnight, go ahead and soak some skewers in water. Drain and reserve marinade. Thread strips of marinated pork onto skewers. Grill on high watching for flare ups, there's a lot of sugar in this sauce. When close to done, baste with reserved marinade and cook till glazed. Serve with sinamak.

You can also do this with chicken.
