Pasta Al Sugo Di Salcisse (Pasta with Sausage Sauce)

This is a pretty simple but delicious Italian dish that'll take you half an hour to prepare.

You'll need (for 2):

� 2/3 salcisse (Italian pigmeat sausages) � 1 onion � 3 cloves of garlic � olive oil � 1 can of peeled tomatoes � salt and black pepper � 1/2 a bunch of arugula � whatever pasta you fancy (I used farfalle)



Method

First, you want to take the skin off of the sausages

Then crumple them up with your hands until they resemble minced meat

Next, take the onion and garlic cloves and peel them

And chop them up nice and finely

Get your can of peeled tomatoes and cut them into small pieces

Get your skillet, put it on a nice high flame, and when it's hot put in some olive oil

Put in your messed up sausage meat and quickly fry it

Add the onion and garlic and let it fry with the meat for a short while ( a minute or 2)

Next, add the tomatoes and mix them in well. Season to taste with salt and pepper, turn the heat down to medium and let simmer for about 20 minutes, with the lid off

Put on some water for your pasta and time it so it'll be done when your sauce is down (my farfalle has a cooking time of 13 minutes, so I put it on 5 minutes after after I made the sauce)

While your pasta is boiling, take the arugula...

... and chop it up

When your sauce has about five minutes to go, add the arugula

Stir it in and leave simmer until your pasta is done, on low heat

Now I like to slice some fresh Italian bread to go with the pasta later, but you can also whip up a quick and simple green salad (or nothing, because the pasta will be quite a lot of food anyway)

When your pasta is done, drain it and run some hot water over it to get the stickiness out

Put pasta on plate, sauce on top of it, and some spare chopped up arugula thrown over it
