Introduction

This is a nice, simple Salmon recipe that I think brings out the flavor of a good piece of Salmon. This went well with brocolli, but would go excellent over polenta or a risotto cake. This was adapted from a recipe by Rachel Ray (yikes).

Ingredients

  • 2 Tablespoons Oil
  • Salmon Filets, ~6oz each
  • 1/2 c Dry White Wine
  • 1/2 c Balsamic Vinegar
  • 4 Tablespoons Orange Juice
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Brown Sugar
  • Salt
  • Ground Black Pepper

Method

Glaze

  • Mix the Wine, Vinegar, Orange Juice, Lemon Juice, and Brown Sugar in a saucepot.
  • Bring to a boil over medium-high heat.
  • After the sauce comes to a boil, reduce heat to medium and simmer.
  • When the sauce has thickened, stir in 1/2 Teaspoon Ground Black Pepper and remove from the heat.

Salmon

  • Season one side of the salmon with a little salt and pepper.
  • Heat a non-stick skillet over medium-high heat.
  • When the pan is hot, add the oil.
  • Place the salmon filets to the pan, seasoned side down. Now the season other side.
  • After about 3 minutes, flip the salmon. It should be golden brown and delicious.
  • After about another three minutes, the salmon should be done.
  • Place the salmon on your plate and drizzle about 1 Tablespoon of the glaze over the salmon.
