Chicken And Cabbage Salad (gỏi gà)

Make some vinegar onions (which is a condiment that's also great in pho)

  • Thinly slice half a medium onion
  • Put in bowl, sprinkle on a bit of sugar, and cover with white vinegar
  • Let sit for at least 30 minutes

Mix dressing, which is the standard fish sauce dipping sauce but undiluted with water:

  • 1 Tb fish sauce
  • 1 Tb sugar
  • 1 Tb lime juice
  • 1 clove garlic minced
  • chile paste or chopped fresh chiles to taste

Toss together and let sit 20-30 minutes:

  • 1 lb shredded cabbage
  • 1 carrot, jullienned
  • handful of Vietnamese basil, chiffonade (or Vietnamese coriander which gives a different flavor to the salad)
  • shredded cooked chicken (as much or little as you like, I think I used a pound of broiled chicken breast here)
  • drained onions
  • dressing
  • 1 tsp of the vinegar from the onions or to taste

The additional vinegar is optional, I like a bit more tartness in the salad. You could also just use more lime juice in the dressing instead.
