Recipe by Ulta Wikified by Drimble Wedge

Catfish tends to have a bad reputation, but I'm here to extol its virtues. Catfish is generally cheap. Its always been a few dollars cheaper per pound than fish like salmon. It's also delicious. Some people think catfish trash, but this is simply not true (at least not for farm raised fish). It's a little more hearty than other white fish, and its probably the type of fish that tastes the least "fishy". Finally, making catfish is easy, and I've provided a recipe my mom taught me. You probably have all the ingredients already, besides the fish. This recipe scales very well, from a meal for one, to a whole family.


What you need:

  • Catfish
  • Flour (equal parts)
  • Parmesan Cheese (equal parts)
  • Salt (sprinkling)
  • Pepper (sprinkling)
  • Oil (For greasing)

For this preparation I had .65 pounds of catfish. I used a half cup of flour and a half cup of cheese, and that was a little too much.

Some tips when selecting fillets:

Smaller is better. Thinner is better.

Go boneless, its worth it.

You can also do nuggets, but they tend to be thicker. They'd work in a pinch.

Step 1:

Preheat the oven to 350

Combine equal parts flour and cheese. Put it in a bowl you don't mind raw fish in. Also grease a pan.

Dredge the fish in the cheese/four mixture

Place the dredged catfish on the greased pan. Apply some salt and peper to taste. Place in the oven for 35-45 minutes, or until the catfish starts to come apart very easily with a fork

Eat.

This recipe is fairly basic, and I'd love to hear some alternative spicings. But it is very simple, for you new cooks out there.
