Leftover Gumbo Suprise
Summary
This little dish is the result of poverty and a refrigerator full of random goodies on the verge of going bad. Part of this dish requires another dish to be made and partially consumed before hand so keep that in mind. At the end, I'll explain how to shortcut directly to this meal.
Ingredients
1 1/4q leftover vegetable beef stew (with ground beef, not beef cubes0: Reduced 2lb ground turkey breast/ground pork (I used turkey) 1 package of smoked turkey sausage (looks like Kielbasa sausage)cut into 1/2in pieces 1q water 4c Jasmine Rice 2 left over ears of corn (or 1 can of corn) 1 can Diced tomatoes 1 can Cut Green Beans 2tbsp (Heaping) Mexican Chili Powder or similar heat producer. (I use ground habanero powder) 2tbsp (Heaping) Ground Black Pepper (use white pepper in a smaller amount if you have it on hand) 1tbsp Sea Salt (or to taste) 2tbsp Granulated Garlic 2tbsp Onion Powder 1tbsp Dehydrated Onion
Procedures
This assumes that you made a pot of vegi stew in a 3 gallon stock pot before hand.
First reduce the stew until most of the liquid is gone. The stew will resemble the way spaghetti sauce from the can looks. Nice and thick. Set the pot aside. In a skillet (size does not matter but use common sense for the amount of meat you are browning) brown the ground meat, adding in 1tbsp of chili powder, 1bdsp Granulated garlic, and the dehydrated onion. Brown the meat well, then add in the smoked turkey. Stir while frying for about 2 minutes then add the contents of the skillet into the stock pot. Place the stock pot on the burner at medium hi heat. Add in the water, seasonings, corn and green beans and bring to a low boil, stirring constantly. Add the rice and stir well, bringing to a full boil. Reduce heat to warm/low and allow to cook for 35 minutes. Return and stir the pot well and remove from heat. Allow to stand for 15 minutes, stirring before serving.
