Warm Curried Mango Salad

- 1 tsp each cumin seed, coriander seed, mustard seed, turmeric powder, caster sugar
- 1 onion, finely sliced
- Half a head of cauliflower, chopped into small pieces
- 1 can chickpeas
- 1 mango, diced
- Handful of spinach
- Juice of 1 lime
- Chili flakes and coriander leaf to finish
Dry fry the cumin, coriander and mustard, then grind and add the turmeric and caster sugar. Set aside.
Fry the onion till browned, then add the spice mix for thirty seconds to coat the onion. Set aside.
Fry the cauliflower till cooked through, then add the chickpeas and the onion/spice mix. Coat and fry for a couple of minutes before adding the mango, lime juice and spinach.
Finally, stir in the chili flakes and coriander leaf.
Also had this served cold for next day lunch a while back, and that wasn't too bad either. Almost certainly better fresh though.
