Paprika and Parsley Potatoes
A dish my father had made since I was a little child. nice, easy to make dish that can be left in the oven to cook as you do other things.
INGREDIENTS
- 1 tablespoon Smoked Mild paprika
- pinch of salt
- cracked black pepper
- 1 tbsp olive oil
- 1 Large clove of Garlic
- bunch of potatoes. (this series of photos used 3 small potatoes)
- handful of chopped parsley
- 1 oven
- oven bake dish with lid (glass dish used here, can use a deep metal oven tray)
Method
Set oven to 220°C (428°F)
Peel and chop potatoes into cubes. (milk lid to size)
We were going to have more potatoes but we only had a few, if you want them crunchier, do smaller cubes.
Cover finely with black pepper and salt.
toss to cover.
Sprinkle smoked mild paprika evenly over potatoes.
Toss/swirl to cover
add 1 large crushed garlic glove
Toss to cover
Drizzle with oil
Toss again!
OKAY! Place in oven with cover on for approximately 40 minutes or until starting to crisp. Remove lid for last 10 minutes. if you need to speed up the time, you can use boiled potatoes (these will be softer and burn easier). you can drain the leftover oil or leave it in the dish.
Add parsley! Toss!
SERVE!
You can add finely chopped black olives as well as parsley to garnish.
