Gluten-Free Banana Bread

Recipe by Stuporstar Wikified by Drimble Wedge
- 1 cup sorghum flour
- 1/2 cup quinoa flour
- 3-4 tbsp tapioca starch
- 2 tbsp xanthan gum
- 3 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tap salt
- 1 1/2 cup mashed bananas
- 1 1/8 cup sugar
- 1/2 cup vegetable oil
- 1/4 cup water
- 1 1/2 tsp vanilla
- 2 eggs
Optional:
- 1 cup chocolate ships, pecans or blueberries
- A pinch of cardamom (as much as you like)
Combine dry ingredients in a bowl: sorghum flour, quinoa flour, tapioca starch, xanthan gum, baking soda, baking powder and salt (as well as cardamom if you decide to use it).
With an electric mixer, beat bananas, oil, sugar, water, vanilla and egg.
Add dry ingredients to wet mix. Add chocolate chips, pecans or blueberries last and stir in gently with a spatula.
Spoon batter into a greased bread pan. Let sit for 30 minutes and preheat oven to 350°F.
Bake for 45 minutes.
