Stuffed Avocados with Black Bean Nachos

Stuffed chipotle, bean and chicken avocados over black bean nachos w/ homemade guacamole

Guacamole:
Ingredients:
- good dash of black pepper
- 1/2 diced tomato
- 1/2 diced onion
- shot of worchestershire
- shot of Goya ancho chile Salsita
- 2 ripe avocados - if they give readily when you push the skin, they're ripe
- 3-4 cloves of garlic
- handful of cilantro
- dash paprika, parsley, chile powder
Method
Cut the avocado longways, smoothly if possible, The idea is to save 2 nice shell halves for later. To remove the pit, simply whack it with your knife:
and pull out while holding the avocado gently down.
If the avocado is properly ripe it will either fall out by itself or be easily removed by this method. Anything less and you'll be fine but will be light on avocado flavor.
Make a paste of most of the garlic and throw in the avocado, worchestershire, salsita and spices.
Mash well, then mix in the diced cilantro, tomatos, and onions with a spoon.
Stuffed avocados:
Ingredients
- 1 large chicken breast, seasoned with cumin and black pepper and butterflied
- 1 chipotle
- leftover trimmings from the onion and garlic
- 12 oz black beans
- 8 oz refried beans
- 3 oz shredded cheese (in this case it was jalapeno jack)
Method
Sear the chicken over medium/high heat for about 3 minutes per side.
When you are done remove the pan from heat and put the peppers in it- they will soften but not get mushy.
Dice the chicken, and mix with the black beans and a diced chipotle or two.
Fill the shells with the mix.
Round out with cheese, top with guacamole like the two on the left, and then a coating of refried beans.
Put in the oven at 400 for 10 minutes on a greased pan. Pretty much anything will do.
The Nachos:
Ingredients:
chili lime tortillas (I wanted the spicy black bean for the trifecta, but they were out) 3 oz shredded cheese 4 oz black beans 1 diced red pepper
Method:
In that time, put the nachos on a greased pan and coat with cheese and beans in layers.
After the 10 minutes turn on the broiler move the avocados there, and put the nachos in the oven. Take the nachos out after 5 minutes.
Plate them with some guacamole, salsa, and sour cream, take the avocado out, and put 2 halves on each plate.
Done.
