Peanut Butter Cheerio Treats
Recipe by: Tinydryad Uploaded by Drimble Wedge
I have been making a tasty treat from peanut butter and cheerios for several years. The way the recipe was given to me, they were pretty sweet. I'd like to make them less sweet, and eat 'em for breakfast. Here's the recipe:
- 1 cup sugar
- 1 cup light Karo syrup
- 1 jar creamy peanut butter (apx 18 oz)
- 5 cups Cheerios
Bring sugar and Karo to a boil in a pot large enough to hold all ingredients.
Add peanut butter, remove from heat, stir until smooth.
Stir in Cheerios.
Spoon in cookie sized blobs on waxed paper, allow to cool.
I have been leaving out most of the cup of sugar. Some of the sweetness depends on what kind of peanut butter you use, but I'm not worried about that. I don't think I can use much less Karo and still have them stick together. Is there anything else I could substitute for some of the Karo?
Suggestion from Flash Gordon Ramsay: Stir some oats (quick oats?) in there.
Suggestion from p00nlog: You could try using agave nectar instead of corn syrup. It has a lighter flavor than corn syrup and I don't think it's quite as sweet. You should be able to substitute it 1:1 for light corn syrup. You could also try using honey, but it is sweeter, more viscous, and obviously has a strong flavor, so you'd have to do some experimenting.
If you have a food processor you can make your own "all natural" peanut butter for next to nothing by just blending unsalted roasted peanuts with oil, and some salt if you desire. It will definitely have a "goopy" texture if you don't refrigerate it.
Suggestion from pr0k: Also honey might be a good sub for some of the corn syrup. Peanut butter and honey go together like...<fill in whatever you like here>
Suggestion from teacherkate: I've done this with sugar(1/2 cup) and honey(1/2 cup) mixed together and then added peanut butter(1/2 cup). I stick whatever I have around in mine...raisins, oats, granola, etc. I just make sure to decrease some cereal if I'm adding extra stuff. I keep mine in the freezer and pop it into the microwave for 20 sec. Yum! I also use the Multigrain Cheerios, but they don't taste icky because of the honey/sugar/peanut butter combo.
