Introduction
Thanks to the baking powder, these pancakes come out extra fuffly, and look very nice stacked on a plate.
Feel free to replace the chocolate chips with whatever 'extra' you might desire.
Ingredients
- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- ¾ teaspoon salt
- 1 tablespoon white sugar
- 1 ¼ cup milk
- 1 (large) egg
- 3 tablespoons butter - melted
- 1 teaspoon vanilla
- ½ bag semi-sweet chocolate chips
Preparation
- Measure and combine dry ingredients into large bowl: flour, baking power, salt, and sugar.
- In separate bowl, combine melted butter, milk, vanilla, and egg. Mix.
- Grease a pan, set burner to low to medium-low heat.
- Combine ingredients into large bowl, mix thoroughly. Add chocolate chips (or what have you), usually half a bag works best (more/less to taste), mix well.
- Pour any amount of batter into pan. When bubbles appear, flip pancake over.
- Pancake will fluff up, flip over when the bottom side begins to turn golden brown. Flip again to even out sides (if needed).
- Remove pancake and start stacking them on a plate.
- Add more batter, cook, and repeat.
- Makes at least five *large* pancakes, more if you cut down on the batter you use.
- Serve with butter and/or syrup - or not! usually they're quite choclately enough as is.
