Biko, Kakanin Biko, Bibingka Biko

Sticky rice cake dessert with a caramel-like topping. My mom used to make this when guests were coming over for dinner. We used to just call it "bibingka", but we'd call a lot of different things bibingka and puto and pancit. It's really hard to keep it straight. If I was to describe it to someone, I'd just say: Bibingka, the one with the whole sweet rice and the caramel topping. I hope to try making some other bibingka's soon.

4 cups sweet rice
4 cups water
2 cans coconut milk
1 can condensed milk
2 cups brown sugar

Wash rice and cook with 4 cups of water in rice cooker. Put coconut milk and sugar in a saucier or saucepan and heat on low, stirring to dissolve brown sugar. Remove from heat when dissolved and add to cooked rice. Mix thoroughly, breaking up clumps of rice and evenly coating everything. Preheat oven to 325 F. Butter a baking pan lightly. Line with banana leaves (optional). Add rice mixture, spread to flatten out top with a spatula. Bake for 25 minutes. Pour condensed milk on top, spread evenly with a spatula, and bake until topping is bubbling and golden brown.
