Potato Farls, aka Fried Starch Bombs

Potato farls are one of my favorite foods. They're pretty much just mashed potatoes mixed with flour and then fried. Ideal if you're looking for a nice hit of starch at breakfast.


Ingredients:

  • 2 Potatoes
  • About a teaspoon of melted butter
  • 1/2 cup of flour
  • Salt, to taste
  • Any sort of oil, between 2 or 3 teaspoons. I would recommend grapeseed or peanut oil for their high smoke points, but all I had on hand was olive oil.


Steps

Peel and cut the potatoes and boil until soft (about 20 minutes):

Put the potatoes and the butter into the bowl of an electric mixer:

Mix:

Add the flour and about a 1/4 teaspoon of salt:

Mix again:

Set the mixture on a well floured surface:

Knead, separate into quarters about 1/4 inch thick:

Lightly oil pan, start frying:

Fry the farls on each side for about 2 minutes, till nice and golden brown:
