Potato Farls, aka Fried Starch Bombs

Potato farls are one of my favorite foods, and insanely versatile. Their pretty much just mashed potatos mixed with flour and then fried. You can make sandwiches with them, they go great with omeletes, or you can just eat them by themselves.
Here's what you'll need for 4 good sized farls:
- 2 Potatoes
- About a teaspoon of melted butter
- 1/2 cup of flour
- Salt, to taste
- Any sort of oil, between 2 or 3 teaspoons. I would recommend vegetable or peanut oil, but all I had on hand was olive oil.
Method
First, peel and cut the potatos into 3 or 4 pieces and boil them in water for about 20 minutes:
Put the potatos and the butter into the bowl of an electric mixer:
Mix them together until smoothe:
Add the flour and about a decent amount of salt, about 1/4 teaspoon:
Mix until everything is nicely blended:
Place the dough onto a well floured surface:
Knead the dough and make it between 1/2 and 1/4 inch thick. Then, cut it into fourths:
Pour oil into a frying pan, and place a piece of dough in it:
Fry the farls on each side for about 2 minutes, till nice and golden brown:
