I've been inspired by people like [[:category:Recipes by Poppymouse|Poppymouse]] to dust off my cooking shoes and show some of my goodies to the gbs crowd. What we're gonna make today are lemon bars. They're basically a sugar cookie bottom with lemon filling on top. Very simple to make and extremely delicious. I've been inspired by people like Poppymouse to dust off my cooking shoes and show some of my goodies to the gbs crowd. What we're gonna make today are lemon bars. They're basically a sugar cookie bottom with lemon filling on top. Very simple to make and extremely delicious. Well, lets cut the crap and start baking.
Can you believe all this random stuff is going to combine to make something so tasty?
Ingredients
Needed for cookie:
1 cup butter 1/2 cup powdered sugar 2 cup all-purpose flour
Needed for filling:
2 cup sugar 4 Tbsp all-purpose flour 1/2 tsp baking powder 4 large egg(s) 6 Tbsp fresh lemon juice 1/2 tsp lemon zest
Method
Preheat your oven to 350F ok? (You either want to lower or raise the temperature by 25F if you're using an opaque pan, I forget which)
First we're doing the cookie, so combine the flour, powdered sugar, and melted butter.
I'm not exactly sure how, but through mixing that stuff you get dough. You wanna spread that dough out into a glass 9x13incher.
That red light means the oven isn't heated yet. You can go ahead and fuck everything up because you're impatient or you can wait til the oven is hot.
Bake that dough for 20 minutes.
Meanwhile, get crackin on that lemon filling. Right here I'm sifting the flour, sugar, and baking powder into a bowl. Sifting gets rid of lumps so your filling is smooth. If you didn't sift you might get a mouth full of baking powder. I haven't done this, but its probably like eating soap, or poo.
A trick I use for juicing a lemon is to roll it on the counter top (rolling now shown). This loosens stuff up so you get the juice out easier. Right here I'm cutting the lemon in half so I can get the juice out.

This actually bled quite a bit, so I had to take an intermission to the hospital. (Don't worry, I didn't forget about my baking cookie shell.)
Well, three hours later I'm back in action. (I got an anesthetic injection and I was all set to get stitched when this crazy drunk guy with an eye infection came in. He kept wandering around the ER so it took multiple people to restrain him. Consequently, my finger was no longer numb when they got ready again, so I had to get another shot.)
Back in action with some borrowed hands (thanks bro)... Juice that lemon good because you need to get a lot out of it.
Get everything else together for the filling and put it all in the bowl with the sifted ingredients. Lemon zest may be acquired by scraping your lemon with a zester, or try using a knife.
Don't risk it, whisk it. It should be runny like the above consistency.
Pour the filling over the cooked cookie. Plop it back in the oven for 25 minutes.
This oven is so fucking badass.
Almost ready.
Let it cool like my mom always says. Shit I'm hungry.
It tastes really good, but I'm using my mangled finger and it hurts.
Lemon bars are really easy to make, and they're tasty, so you might wanna try them for a picnic, or if you're American you can make them for your neighbors on the 4th
