I decided to give this a shot because I just received a KA stand mixer as a wedding gift and needed an excuse to try out that bread hook attachment. Here is the recipe that I used for the crust taken directly from the KA recipe booklet that came with the mixer, I didn't get any pictures of this but it wasn't anything complex:


Crusty Pizza Dough

Ingredients

  • 1 Package dry active yeast
  • 1 cup warm water (I had mine at 110 degrees)
  • 1.5 teaspoon salt
  • 2 teaspoons olive oil
  • 2.5 - 3.5 cups of all purpose flour
  • 1 tablespoon cornmeal (didn't use this as it is for making pizza crust)

Method

  • Dissolve yeast and warm water in warmed mixing bowl. Add salt, olive oil, and 2.5 cups flour. Attach bowl and dough hook to mixer, turn to speed 2 and mix for 1 minute.
  • Continuing on speed 2, add remaining flour half cup at a time and mix until dough clings to hook and cleans sides of bowl, knead on speed 2 about 2 minutes longer.
  • Place dough in greased bowl turning to grease top. Cover. Let rise in warm place about 1 hour or until doubled in bulk.
  • I deviated slightly from the recipe by doubling the ingredients because I plan on freezing the remaining pizza dough for future meals, plus I'm making dinner for 3 with it tonight and using this thread as a lunch time test run to try this out and see how it shapes up as far as the remaining ingredients.


Filling

I'm using the following, sort a combination of several recipes I looked at:

  • Ragu pizza sauce
  • Pepperoni
  • Canadian bacon
  • Italian sausage
  • Italian seasoning
  • Mozzarella cheese
  • Fresh ground pepper
  • Salt
  • Garlic salt
  • Onion powder

Method

  • Didn't use any specific measured amount, just added the seasonings sparingly and went until the meats looked appetizing. WOuld have added mushrooms, olives, and maybe some onion but didn't have any handy and didn't want to make another trip to the store.
  • Wow that actually made alot more dough than I thought it would:

  • Brown the sausage:

  • Preheat oven to 375 Degrees:

  • Drain all the nasty grease off:

  • Combine sausage, pepperoni, canadian bacon, pizza sauce, and seasonings in mixer bowl using flat beater on stir setting.

  • Taking a smallish ball of dough roll it out with a floured rolling pin (or if you are ghetto like me a wine bottle) into a circular type shape.

  • Add some off the meat and sauce mix:

  • Sprinkle on some cheese:

  • Fold that bad boy over and pinch down the edges to seal in the goodness:

  • Toss it in the oven, It's almost done!

  • I baked mine for about 30 minutes, and brushed on some butter about half way through the cooking time, this is one thing that I think could use some adjusting because I just kind of guessed as to how long I should have cooked it.

  • This actually came out pretty decent but would have benefited from more veggies to offset all the meat going on crust was tasty though, kitchenaid knows whats going on with that. Overall a tasty meal that works great if you like to make stuff like this from scratch, just make sure to have some veggies in there.
