Ingredients:
- 2 bottles of white wine or alcoholic cider
- Brown rum – at least 20cl, more is appreciated!
- 4 star anis anise
- A thumb sized piece of fresh ginger, sliced thickly
- Half a grated nutmeg
- 20 black peppercorn
- 2 sticks of cinnamon
- 4 allspice
- 4 juniper berries
- 1 tsp whole coriander
- Half a bay leaf
- Zest of 1 lemon
- Cane sugar
All the spices are to be whole, if they’re crushed, they will make the drink cloudy.
Crush the spices a bit in a mortar (not too much), just crack the peppercorns etc. and add them to 50 cl’s of water to a pot, and let it simmer for half an hour – leave until next day.
Strain the spice mixture, and add to wine/cider, and heat until right under boiling (80 degrees c), add sugar to taste, and add rum last.
Serve!
