I made these for the office this morning and brought them in while still warm. It was my day off but I wanted to share something considering they have to work today.
I think I may have made a few people very very happy when they ate them (with the exception of one bitchy office worker who said she was too busy to have one, merry christmas to her too pfffft).
Muffins
Ingredients
- 4 cups flour
- 1 cup white sugar
- 2 Tablespoons baking powder
- 1 teaspoon salt
- 1/2 a nutmeg nut or 1 teaspoon(ish) of ground nutmeg
- 1/2 teaspoon cinnamon
- pinch allspice
- 2 cups egg nog
- 1/2 cup dark Rum
- 2/3 cup melted butter (you could go with oil or half oil half butter)
- 2 eggs
- 1 Tablespoon vanilla extract
- coarse sugar (optional)
Method
Oven to 400F Combine flour, sugar, baking powder, salt & spices in a large bowl (because I am lazy..uh..efficient I use a blender, if you want use a whisk) Blend together the Egg nog, rum, melted butter, eggs and extract. Add wet ingredients to dry, stir until just combined and spoon into muffin cups. Top with coarse sugar. Bake about 20 minutes but check at 15. (I got 18 muffins in large muffin cups)
Rum Butter
Ingredients
- 3/4 cup butter
- 1/8 cup rum
- 1 teaspoon vanilla
- icing sugar (or what is it called in the US? 10X sugar? Powdered sugar?)
Method
Beat the butter until it is nice and creamy and whipped, then add the rum and vanilla - once it is all incorporated add as much sugar to keep it nice and fluffy and spreadable and to the sweetness level you want. I only used about a 1/4 cup but I know it could make a really wicked frosting like butter too.
No photos because they all got eaten - however they look just like blonde muffins.
