Potato farls are one of my favorite foods. They're pretty much just mashed potatoes mixed with flour and then fried. Ideal if you're looking for a nice hit of starch at breakfast.

Ingredients:
- 2 Potatoes
- About a teaspoon of melted butter
- 1/2 cup of flour
- Salt, to taste
- Any sort of oil, between 2 or 3 teaspoons. I would recommend grapeseed or peanut oil for their high smoke points, but all I had on hand was olive oil.
Steps
Peel and cut the potatoes and boil until soft (about 20 minutes):
Put the potatoes and the butter into the bowl of an electric mixer:
Mix:
Add the flour and about a 1/4 teaspoon of salt:
Mix again:
Set the mixture on a well floured surface:
Knead, separate into quarters about 1/4 inch thick:
Lightly oil pan, start frying:
Fry the farls on each side for about 2 minutes, till nice and golden brown:
