There's a great thread currently running on Rainbow Cakes. It's been a really fun pile of pictures, as everybody shows off their colorful cakery. Anyway, I wanted to make a slight variation on the theme.
- 1 cup butter, softened
- 1 1/2 cups granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 1/2 cups all-purpose flour
- Tons of GEL food coloring
In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add the sugar, baking powder and salt; beat until combined. Beat in the egg, vanilla and extract until well combined. Stir in flour until just mixed. Whatever, this is the boring part.
Divide the dough into 6ths. (I used a scale, because I'm a big nerd.)
Knead in quite a bit of GEL food coloring. (It's important to use the gel and not the liquid. If you use liquid, you won't be able to get such strong colors w/o changing the dough's taste/consistency.)
Form into planks and stack, and let the dough chill-out in the fridge for an hour.
Slick into little squares of gay pride.
Bake at 375 for 10 minutes.
