Applesauce
First, buy a shit-ton of apples. If your market doesn't sell by the "shit-ton", just get two bushels.
Wash the apples and remove the labels. Mine had those crummy paper one, so instead of scrubbing, I sliced off little pieces of peel all over the kitchen.
Core.
- 12 lbs Organic Pink Lady Apples
- 3 C Apple Cider Vinegar
- 6 C Water
Stew all the above in a big stock pot, till the apples are falling apart. Move everything to a food processor and mush into apple-sauce.
Apple Butter
To the above, add:
- 2 T Cinnamon
- 1/2 T Cloves
- 1/2 T Allspice
- 4 C Sugar
And reduce by about 1/3. Your first thought might be to do this on the stove-top. This is a bad idea
I tried a couple things, but the best was to move it to a dutch oven and bake at 250 for 8 hours.
Puree in batches
Process in a boiling water bath for 10 minutes.
