-I grew up eating Vietnamese food so my preferences are very much biased, but it is my favorite cuisine. There is such a variety of flavors, textures, styles. There are three main regions dividing the cuisine of Vietnam. Northern Vietnam is more traditional and is the birthplace of one of the more well-known Vietnamese dishes, phở. Central Vietnam is not too familiar to me except for the city of Huế where you will find my favorite soup, bún bò Huế. Finally, there is the South where you'll find a greater variety of ingredients and spices, more use of ingredients such as curry powder and coconut milk. Who knows why I'm even mentioning these regional distinctions because I don't know where every dish comes from.
+Spaghetti alla Carbonara is a simple, comforting dish -- when made properly. It's classic Italian fare that somehow lost its magic when coming stateside, much like how cacciatore, bolognese, and even alfredo have been reduced to comical shells of their original recipes.

While I did absorb some things watching my family cook when I was young, I did not develop much interest in cooking until my college years and only started cooking Vietnamese food when I realized that living away from home, if I wanted to eat the foods I love, I needed to cook them myself. Over the years I've become comfortable with making a good number of dishes but I'm still figuring out the right balance for others. Any other Vietnamese cooks here, please chime in and share.
+This is more or less "authentic" Carbonara. Note that it lacks peas, cream, chicken, or any number of other fillers as you may have seen it in restaurants. If my tone seems bitter, it is because it saddens me that the closest thing I have found in a US restaurant has been runny, goopy, or cluttered. (The one notable exception being Cyrus, north of Sonoma, but that's a story for another thread). My first real Carbonara in a neighborhood restaurant in Rome was an epiphany. Warm, textured, rustic and filling.

-It seems that Filipino food is really coming into popularity these days. I remember growing up and having to be slightly apologetic about the food, mentioning oxtails, tripe, tongue, blood stew, and duck fetuses don't exactly whet the palate of your average American. Well with people like Chris Cosentino and others fighting the good fight in snout-to-tail eating, and the recent episode of 24 hr Restaurant Battle featuring a Filipino restaurant ( that won with a menu serving oxtail, tripe, and lengua ), and even Tony Bourdain's proclamation that Filipino Lechon is the best pig in the world, perhaps Filipino food will be the next food trend.
